Cooking with Kelsey: Because WTF are we going to make for dinner, again?!


Welcome to the Cooking with Kelsey series, where we tackle the chaos of cooking for our families without losing our minds... Okay lets face it! were losing our minds but not our appetites! Life gets hectic, and when you’re juggling work, kids, and a million other responsibilities, the last thing you want is to spend hours in the kitchen. That's why I’m here to share some simple yet mouthwatering recipes that are perfect for those busy nights when the kids are hungry and you just need to get dinner on the table—fast!


The Reality Check: Meal Prep Made Easy


Before we dive into the delicious recipes, let’s talk about meal prep. It’s a lifesaver for busy parents, and trust me, it doesn’t have to be complicated or time-consuming. Meal prepping means you can spend just a little time on the weekend to set yourself up for success during the week. Here’s what you need to know:


1. Plan Your Meals: Sit down and jot down what you want to eat for the week. Choose recipes that can be easily doubled or stored in the fridge. Think about your family's favorites!


(Note: I wake up at 4:30am and for me thats not only time for myself but its time for me to plan out my week. I make a grocery list for myself with a planned out menu for the week!)

2. Grocery List: Once you have your meals planned, create a grocery list. Stick to it to avoid impulse buys Because we all know those donut aisles can be tempting! ... Okay, ***k it grab the donuts because you deserve it, Honeyyyy!!


(Another note: If you have chat GPT, you can ask it to plan out your weeks menu with your budget, number of people you are feeding, which grocery store you're shopping at. Chat GPT should give you a grocery list within your budget with sample menu. now its not going to be super accurate with your budget but we'll say it gets you around that number.)

3. Batch Cooking: Choose one or two days a week to batch cook. This could mean cooking larger portions of things like rice, quinoa, or roasted veggies that you can use in multiple meals.


(Note: Life Saver Hacks! Pressure cooker is a game changer and will save time because lets face it, that should be the only pressure you should be under this week. Slow cooker should be your new secret boyfriend, you can dump all of you problems with him in the morning and he'll still be there, hot and ready 8 hours later. Some call it toxic -- I call it love.)

4. Storage: Invest in some good quality storage containers. They’ll help keep your meals fresh and make it easy to grab and go during the week. We should probably start talking about your storage container cabinet because iykyk!!!!






5. Get the Kids Involved: Let them help with meal prep! It’s a fun way to teach them about healthy eating and cooking while spending quality time together.. (***mit! Stop, pulling your sisters hair and come out here and help me! Ugh! glug glug glug
